Steve and Sandy -Beef (or lamb) Hotpot

This should be about right any glaring errors just do as a friend once said to me – MAKE IT UP!!
  • 1kg Beef or lamb cubed
  • 440g can of diced tomatoes
  • 1 cup of beef stock
  • One large brown onion diced
  • Two cloves of garlic diced
  • Two tablespoons plain flour
  • Two tablespoons olive oil
Flour beef, then Sautee garlic and onion in oil for a few minutes before adding Beef and fry until beef is browned.  Add tomatoes and beef stock bring to the boil them simmer gently with the lid on for a few hours over hot coals stirring occasionally.

Around an hour before serving prepare dumpling mix as follows (hint make the potato at the same time as the beef mix, cold instant potato is easier to handle)

Two cups of instant potato and water (check the direction on the packet for the right amount of water)
  • Two cups of shredded cheese
  • 1 cup of SR flour
  • ½ cup of chopped parsley (or mixed herbs to taste)
Mix potato, cheese, flour and parsley together and shape into dumplings and place on beef mixture, cover with lid and put hot coals on top of the camp oven, wait about an hour and serve
